Onyx Spirits Company To Release Connecticut’s First Whiskey

Onyx Moonshine Getting Barrel Aged

 

June 10, 2013 (East Hartford, CT) – Connecticut liquor distillery Onyx Spirits Company has announced Monday that they will be releasing Connecticut’s first aged whiskey.

The distillery’s flagship product, Onyx Moonshine, is now being aged in 33, five gallon American oak charred barrels sealed in organic bees wax.  Onyx Moonshine is made from 50% corn, malted grains, and Connecticut spring water.  Aging the moonshine in oak barrels will add the color, smokiness, and flavors that will morph New England’s first legal moonshine into a traditional, Connecticut whiskey. Six months in a five gallon barrel is equivalent to approximately three years in a standard 53 gallon whiskey barrel, due to the increased surface value ratio.

 “We’ve been aging Onyx for our own secret stash for years,” said Onyx Spirits co-founder Adam von Gootkin.  “It’s everything customers love about Onyx, with the addition of the smokiness and flavors that only charred American oak, time, and skill can impart.  It makes an incredibly smooth whiskey, and it’s about time Connecticut has a premium whiskey it can be proud of,” he added.

 The 33 private barrels have been offered exclusively to stores and restaurants in Connecticut, with only one barrel allowed per location. Each barrel will yield roughly thirty 750ml bottles at 91 proof, and each barrel will taste uniquely different. The bottles will be hand labeled with the barrel and bottle number and will retail for around $60 per bottle. Less than 1,000 bottles will be produced, and they will be released in December 2013.

 To make Onyx Moonshine and the barrel aged moonshine as local as possible, Onyx Spirits co-founder Peter Kowalczyk has begun growing corn on his family farm in Wethersfield to be used in 2014 for both Onyx Moonshine and the barrel aged Onyx Moonshine.
