Onyx, which is now based in East Hartford but got its start in Manchester, has blended its popular moonshine with Connecticut-grown honeycrisp apples, honey and cinnamon for a distinctly fall flavor.
“This is our own spin on the infamous apple pie moonshine so many people are familiar with,” Onyx co-founder Adam von Gootkin said in a statement. “Instead of adding sugar or syrup, we wanted to keep it as natural and pure tasting as possible. The flavor is incredibly smooth and as fresh tasting as it gets. It’s Connecticut in a bottle.”
The apples come from Wallingford's Blue Hills Orchard, which is the largest apple producer in the state, and are sliced and submerged in vats of Onyx Moonshine, where they steep for a week along with cinnamon sticks and Connecticut-made honey, before being strained, blended and bottled.
“Honeycrisp apples work as a very fine dessert apple due to the higher sugar levels, and it’s one of the juiciest apples I know of,” said orchard president, Eric Henry in an email. "It’s really great to see our locally grown apples used in a locally made spirit.”
The limited release Apple Honey Infusion moonshine will be available in stores and restaurants statewide for the month of October, but only 280 cases are being released to the public.
